Serves 2
Ingredients:
- 3/4 cup unsweetened almond milk
- 1/2 cup quinoa
- 1/4 cup water
- 1 tbsp brown sugar
- 1/4 tsp cinnamon
- 1/8 tsp salt
- 1 medium banana, sliced
- 2 tbsp almond butter
- 2 tbsp slivered almonds
Directions:
- Combine almond milk, quinoa, water, brown sugar, cinnamon and salt in a saucepan; bring to boil over medium-high heat. Reduce heat and simmer, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed (10 – 15 min).
- Divide between 2 bowls and top each with banana, almond butter and almonds.
