Cinnamon Quinoa Breakfast Bowls

Serves 2

Ingredients:

  • 3/4 cup unsweetened almond milk
  • 1/2 cup quinoa
  • 1/4 cup water
  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 1 medium banana, sliced
  • 2 tbsp almond butter
  • 2 tbsp slivered almonds

Directions:

  1. Combine almond milk, quinoa, water, brown sugar, cinnamon and salt in a saucepan; bring to boil over medium-high heat. Reduce heat and simmer, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed (10 – 15 min).
  2. Divide between 2 bowls and top each with banana, almond butter and almonds.
