Ingredients:
- 1/2 cup coconut milk
- 1/4 cup lime juice
- 1.5 tbsp fish sauce
- 1 tbsp sugar
- 1-2 Fresno chilled, stemmed, seeded and minced
- 1/4 tsp salt
- 1/2 tsp pepper
- 3 cups cooked chicken
- 1 lb green cabbage, cored and thinly sliced (~8 cups)
- 1/2 small red onion, thinly sliced
- 3-4 radishes, halved and thinly sliced
- 1/2 cup roughly chopped fresh cilantro
- 1/2 cup roughly chopped fresh mint
- 1/2 cup roughly chopped cashews
Directions:
- In a small bowl, whisk together the coconut milk, lime juice, fish sauce, sugar, chili, salt and pepper.
- IN a large bowl, combine the chicken, cabbage, onion, radishes, cilantro and mint. Add the dressing and toss well. Add cashews and serve.
