Thai Chicken and Cabbage Salad

Ingredients:

  • 1/2 cup coconut milk
  • 1/4 cup lime juice
  • 1.5 tbsp fish sauce
  • 1 tbsp sugar
  • 1-2 Fresno chilled, stemmed, seeded and minced
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 3 cups cooked chicken
  • 1 lb green cabbage, cored and thinly sliced (~8 cups)
  • 1/2 small red onion, thinly sliced
  • 3-4 radishes, halved and thinly sliced
  • 1/2 cup roughly chopped fresh cilantro
  • 1/2 cup roughly chopped fresh mint
  • 1/2 cup roughly chopped cashews

Directions:

  1. In a small bowl, whisk together the coconut milk, lime juice, fish sauce, sugar, chili, salt and pepper.
  2. IN a large bowl, combine the chicken, cabbage, onion, radishes, cilantro and mint. Add the dressing and toss well. Add cashews and serve.
