Sesame Sichuan Chicken Salad

Ingredients:

  • 2 tsp Sichuan peppercorns
  • 2 tbsp sesame seeds, toasted
  • 1 1/2 tbsp chili crisp
  • 2 tbsp rice vinegar
  • 2 tbsp white sugar
  • 1 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • 2 tsp grated ginger
  • 1/2 tsp salt + salt and pepper to taste
  • 3 cups shredded chicken
  • 1/2 English cucumber, halved lengthwise, seeded and sliced
  • 1 medium red bell pepper
  • 1 bunch scallions

Directions:

  1. Grind the Sichuan peppers into a large bowl. Add the chili crisp, vinegar, sugar, sesame oil, soy sauce, ginger, and 1/2 tsp salt. Whisk until sugar dissolves.
  2. Add the chicken, cucumber, bell peppers, sesame seeds, and about 3/4 scallions to bowl and toss to combine. Season with salt and pepper to taste. Transfer to serving dish and top with remaining scallions.
