Ingredients:
- 2 tsp Sichuan peppercorns
- 2 tbsp sesame seeds, toasted
- 1 1/2 tbsp chili crisp
- 2 tbsp rice vinegar
- 2 tbsp white sugar
- 1 tbsp toasted sesame oil
- 1 tbsp soy sauce
- 2 tsp grated ginger
- 1/2 tsp salt + salt and pepper to taste
- 3 cups shredded chicken
- 1/2 English cucumber, halved lengthwise, seeded and sliced
- 1 medium red bell pepper
- 1 bunch scallions
Directions:
- Grind the Sichuan peppers into a large bowl. Add the chili crisp, vinegar, sugar, sesame oil, soy sauce, ginger, and 1/2 tsp salt. Whisk until sugar dissolves.
- Add the chicken, cucumber, bell peppers, sesame seeds, and about 3/4 scallions to bowl and toss to combine. Season with salt and pepper to taste. Transfer to serving dish and top with remaining scallions.
