Chocolate Topped Pecan Lace Cookies

Ingredients:

  • 1/2 cup all purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup uncooked oats
  • 1/2 cup ground pecans
  • 1.5 tsp orange peel
  • 1/4 tsp baking powder
  • 6 tbsp unsalted butter, melted
  • 2 tsp light corn syrup
  • 2 tbsp heavy whipping cream
  • 1 cup semi-sweet chocolate chips, melted

Directions:

  1. Heat oven to 325 degrees. Line cookie sheets with parchment paper.
  2. Combine flour, brown sugar, oats, pecans, orange peel, and baking powder in medium bowl. Combine melted butter, corn syrup, and whipping cream in a small bowl. Stir butter mixture into flour mixture; mix well.
  3. Drop dough by rounded teaspoons, 4 inches apart, onto prepared cookie sheets. Bake for 7 to 8 minutes or until edges are golden brown and bubbly. Cool completely on parchment paper.
  4. Spread flat side of each cookie with melted chocolate using a pastry brush or spatula. Place onto clean parchment paper, chocolate side up. Let stand until chocolate has set.
