Cashew Corn Crunch Clusters

Ingredients:

  • 1/2 cup butter
  • 2/3 cup packed brown sugar
  • 1 tbsp corn syrup
  • 1/4 tsp vanilla
  • 3 cups crisp corn cereal squares
  • 1 cup lightly salted cashews

Directions:

  1. Line two baking sheets with waxed paper.
  2. Melt butter in 3-quart saucepan over low heat; stirring constantly. Stir in brown sugar and corn syrup. Increase heat to medium. Cook, stirring constantly, until mixture comes to a full boil (1-2 minutes). Boil 1 minute. Remove from heat. Stir in vanilla. Add cereal and cashews; gentility stir until well coated.
  3. Drop mixture by rounded tablespoons onto prepared baking sheets. Cool completely.
