Ginger Cutout Cookies

Ingredients:

  • 1.25 cups sugar
  • 1 cup butter, softened
  • 1 egg
  • 3 tbsp molasses
  • 1 tsp vanilla
  • 3 cups all purpose flour
  • 1.5 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • Powdered sugar

Directions:

  1. Combine sugar and butter in large bowl. Beat at medium speed, scraping bowl, until creamy. Add egg, molasses and vanilla; continue beating until well mixed. Reduce speed to low; add all remaining ingredients except powder sugar.
  2. Divide dough into thirds. Shape each third into round balls, flatten to 1/2 inch thickness and wrap each disk in plastic wrap. Refrigerate until firm (1 to 2 hours).
  3. Heat oven to 375 degrees. Roll out dough on lightly floured surface, one third at a time, to 1/8-inch thickness. Cut with 2 to 3-inch cookie cutter. Place 1-inch apart onto untreated onto cookie sheets. Bake for 5 to 7 minutes or until set. Let stand for one minute; remove from cookie sheets. Cool completely. Sift powder sugar over cooled cookies.
