{"id":531,"date":"2026-03-08T20:02:46","date_gmt":"2026-03-08T20:02:46","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=531"},"modified":"2026-03-08T20:02:46","modified_gmt":"2026-03-08T20:02:46","slug":"sesame-sichuan-chicken-salad","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2026\/03\/08\/sesame-sichuan-chicken-salad\/","title":{"rendered":"Sesame Sichuan Chicken Salad"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tsp Sichuan peppercorns<\/li>\n\n\n\n<li>2 tbsp sesame seeds, toasted<\/li>\n\n\n\n<li>1 1\/2 tbsp chili crisp<\/li>\n\n\n\n<li>2 tbsp rice vinegar<\/li>\n\n\n\n<li>2 tbsp white sugar<\/li>\n\n\n\n<li>1 tbsp toasted sesame oil<\/li>\n\n\n\n<li>1 tbsp soy sauce<\/li>\n\n\n\n<li>2 tsp grated ginger<\/li>\n\n\n\n<li>1\/2 tsp salt + salt and pepper to taste<\/li>\n\n\n\n<li>3 cups shredded chicken<\/li>\n\n\n\n<li>1\/2 English cucumber, halved lengthwise, seeded and sliced <\/li>\n\n\n\n<li>1 medium red bell pepper<\/li>\n\n\n\n<li>1 bunch scallions<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Grind the Sichuan peppers into a large bowl.  Add the chili crisp, vinegar, sugar, sesame oil, soy sauce, ginger, and 1\/2 tsp salt.  Whisk until sugar dissolves.<\/li>\n\n\n\n<li>Add the chicken, cucumber, bell peppers, sesame seeds, and about 3\/4 scallions to bowl and toss to combine.  Season with salt and pepper to taste.
