{"id":529,"date":"2026-03-08T19:54:57","date_gmt":"2026-03-08T19:54:57","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=529"},"modified":"2026-03-08T19:54:57","modified_gmt":"2026-03-08T19:54:57","slug":"caramelized-onion-pasta","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2026\/03\/08\/caramelized-onion-pasta\/","title":{"rendered":"Caramelized Onion Pasta"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>2 tbsp butter <\/li>\n\n\n\n<li>5 onions, thinly sliced<\/li>\n\n\n\n<li>1\/2 tsp salt<\/li>\n\n\n\n<li>8 cloves garlic, minced <\/li>\n\n\n\n<li>12 oz spaghetti noodles<\/li>\n\n\n\n<li>1\/4 cup sun dried tomatoes in oil<\/li>\n\n\n\n<li>2 tbsp chili crunch oil<\/li>\n\n\n\n<li>1 tsp oregano<\/li>\n\n\n\n<li>1 tsp basil<\/li>\n\n\n\n<li>1\/2 tsp parsley<\/li>\n\n\n\n<li>1\/4 tsp thyme<\/li>\n\n\n\n<li>1\/4 tsp rosemary<\/li>\n\n\n\n<li>1\/4 tsp marjoram<\/li>\n\n\n\n<li>1\/4 tsp sage<\/li>\n\n\n\n<li>1\/4 tsp garlic powder<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n\n\n\n<li>2 tbsp soy sauce<\/li>\n\n\n\n<li>1 tbsp balsamic vinegar <\/li>\n\n\n\n<li>13.5 oz can coconut milk<\/li>\n\n\n\n<li>1\/4 cup Parmesan<\/li>\n\n\n\n<li>2 tbsp fresh parsley chopped<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large skillet add 2 tbsp olive oil and 2 tbsp butter. Once butter is melted, add onions and sprinkle with salt.  Stir together until onion are well coated.  Cook onions over low heat until caramelized &#8211; approximately 35-40 minutes.<\/li>\n\n\n\n<li>While onions cook, prepare pasta reserving 1\/2 cup of cooking water.<\/li>\n\n\n\n<li>Add minced garlic, 1\/4 cup sun dried tomatoes and 2 tbsp chili crunch oil and stir together.  Add oregano, basil, parsley, thyme rosemary, marjoram, sage, garlic powder, and salt and pepper to taste.  Stir.<\/li>\n\n\n\n<li>Add soy sauce and balsamic vinegar.  Stir, scraping bottom of pan.<\/li>\n\n\n\n<li>Add coconut milk, stir. Cook for 3-4 minutes.  Add cooked pasta and Parmesan cheese.  Stir together coating all of the pasta with sauce.
