{"id":520,"date":"2025-12-24T12:10:48","date_gmt":"2025-12-24T12:10:48","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=520"},"modified":"2025-12-24T12:10:48","modified_gmt":"2025-12-24T12:10:48","slug":"thai-chicken-and-cabbage-salad","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2025\/12\/24\/thai-chicken-and-cabbage-salad\/","title":{"rendered":"Thai Chicken and Cabbage Salad"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 cup coconut milk<\/li>\n\n\n\n<li>1\/4 cup lime juice<\/li>\n\n\n\n<li>1.5 tbsp fish sauce<\/li>\n\n\n\n<li>1 tbsp sugar<\/li>\n\n\n\n<li>1-2 Fresno chilled, stemmed, seeded and minced<\/li>\n\n\n\n<li>1\/4 tsp salt<\/li>\n\n\n\n<li>1\/2 tsp pepper<\/li>\n\n\n\n<li>3 cups cooked chicken<\/li>\n\n\n\n<li>1 lb green cabbage, cored and thinly sliced (~8 cups)<\/li>\n\n\n\n<li>1\/2 small red onion, thinly sliced<\/li>\n\n\n\n<li>3-4 radishes, halved and thinly sliced<\/li>\n\n\n\n<li>1\/2 cup roughly chopped fresh cilantro<\/li>\n\n\n\n<li>1\/2 cup roughly chopped fresh mint<\/li>\n\n\n\n<li>1\/2 cup roughly chopped cashews<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a small bowl, whisk together the coconut milk, lime juice, fish sauce, sugar, chili, salt and pepper.<\/li>\n\n\n\n<li>IN a large bowl, combine the chicken, cabbage, onion, radishes, cilantro and mint.  Add the dressing and toss well.
