{"id":492,"date":"2025-12-15T23:40:05","date_gmt":"2025-12-15T23:40:05","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=492"},"modified":"2025-12-15T23:40:05","modified_gmt":"2025-12-15T23:40:05","slug":"almond-shortbread-thumbprint-cookies","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2025\/12\/15\/almond-shortbread-thumbprint-cookies\/","title":{"rendered":"Almond Shortbread Thumbprint Cookies"},"content":{"rendered":"\n<p><strong>Cookie Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup butter, softened<\/li>\n\n\n\n<li>2\/3 cup sugar<\/li>\n\n\n\n<li>1\/2 tsp almond extract<\/li>\n\n\n\n<li>2 cups all-purpose flour<\/li>\n\n\n\n<li>Jam of your choice<\/li>\n<\/ul>\n\n\n\n<p><strong>Glaze Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup powdered sugar<\/li>\n\n\n\n<li>1.5 tsp almond extract<\/li>\n\n\n\n<li>2-3 tsp water<\/li>\n<\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine butter, sugar and 1\/2 tsp almond extract in a large bowl. Mix at medium speed, scraping bowl often, until creamy.  Reduce speed to low; add flour.  Beat until well mixed.  Cool in refrigerator until firm (approximately an hour).<\/li>\n\n\n\n<li>Heat oven to 350 degrees. Shape dough into 1-inch balls. Place 2 inches apart onto cookie sheets.  Mak indentation in center of each cookie with thumb (edges may crack slightly).  Fill each indentations with about 1\/4 tsp jam.<\/li>\n\n\n\n<li>Bake for 14 to 18 minutes or until edges are lightly browned.  let stand 1 minute; remove from cookie sheet and cool completely.<\/li>\n\n\n\n<li>Meanwhile, combine powder sugar, 1.5 tsp almond extract and enough water for desired glazing consistency in a small bowl with a whisk until smooth.
