{"id":458,"date":"2024-07-13T15:13:37","date_gmt":"2024-07-13T15:13:37","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=458"},"modified":"2026-07-04T23:25:55","modified_gmt":"2026-07-04T23:25:55","slug":"strawberry-lemonade-cake","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2024\/07\/13\/strawberry-lemonade-cake\/","title":{"rendered":"Strawberry Lemonade Cake"},"content":{"rendered":"\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Ingredients:<\/strong><\/p>\n<\/div><\/div>\n\n\n\n<p>Cake<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup unsalted butter, softened<\/li>\n\n\n\n<li>4 large eggs, separated<\/li>\n\n\n\n<li>2 cup sugar<\/li>\n\n\n\n<li>12 oz cake flour (3 cups)<\/li>\n\n\n\n<li>1 tbsp baking powder<\/li>\n\n\n\n<li>1\/8 tsp salt<\/li>\n\n\n\n<li>1 cup milk<\/li>\n\n\n\n<li>1 tbsp lemon zest<\/li>\n\n\n\n<li>1 tbsp lemon juice<\/li>\n<\/ul>\n\n\n\n<p>Strawberry Lemonade Jam<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2.5 cups coarsely chopped strawberries <\/li>\n\n\n\n<li>3\/4 cup sugar<\/li>\n\n\n\n<li>1\/4 cup lemon juice<\/li>\n\n\n\n<li>3 tbsp corn starch<\/li>\n<\/ul>\n\n\n\n<p>Strawberry Frosting:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8 oz cream cheese<\/li>\n\n\n\n<li>2\/3 cup sugar<\/li>\n\n\n\n<li>2\/3 cup chopped strawberries<\/li>\n\n\n\n<li>Pink or red food coloring<\/li>\n\n\n\n<li>1.5 cups heavy cream<\/li>\n\n\n\n<li>3 tbsp lemon juice<\/li>\n<\/ul>\n\n\n\n<p><strong>Directions:<\/strong><\/p>\n\n\n\n<p>To make cake &#8211;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 350 F.  Grease two cake pans (8 or 9 inch circular).<\/li>\n\n\n\n<li>Beat butter at medium speed with mixer until creamy; gradually add sugar; beat until light and fluffy.  Add egg yolks one at a time beating until well blended.<\/li>\n\n\n\n<li>In a separate bowl, whisk together flower and next two ingredients.<\/li>\n\n\n\n<li>Alternate adding flour mixture and milk to butter mixture,  beginning and ending with flour mixture.  Set aside.<\/li>\n\n\n\n<li>Beat egg whites with mixer at high speed until stiff peaks form. <\/li>\n\n\n\n<li>Gently fold 1\/3 of egg white mixture into batter; fold in remaining egg whites.  Spoon batter into 2 greased cake pans.<\/li>\n\n\n\n<li>Bake at 350 for 25 minutes, or until a wooden pick inserted into the batter comes out clean.  Cool pans on wire rack for 10 minutes.  Then remove cake from pans and cool completely.<\/li>\n<\/ol>\n\n\n\n<p>To make jam &#8211;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Process strawberries in a blender until smooth.  Pour into a 3 quart saucepan.  Stir in sugar.  <\/li>\n\n\n\n<li>Whisk cornstarch and lemon juice together in a small bowl.  Gradually whisk cornstarch mixture into strawberry mixture.<\/li>\n\n\n\n<li>Bring to a boil over medium heat; cook whisking constantly for 1 minutes.<\/li>\n\n\n\n<li>Remove from heat.  Pour into a bowl; cover tightly with plastic wrap directly on jam and chill for 2 hours or until cold.  Maybe refrigerated in an airtight container for up to a week.<\/li>\n<\/ol>\n\n\n\n<p>To make frosting &#8211;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Beat cream cheese and 1\/3 cup sugar with mixer until smooth.  Add strawberries and food coloring.<\/li>\n\n\n\n<li>Beat heavy cream and lemon juice at medium speed until frothy.  Increase speed until to medium high.  Gradually add remaining 1\/3 cup sugar, beating until stiff peaks form.<\/li>\n<\/ol>\n\n\n\n<p>Assemble the cake &#8211;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>With a serrated knife, slice each cake horizontally into two layers,<\/li>\n\n\n\n<li>Place first layer on serving plate.  Spoon about 1\/2 cup of jam mixture, leaving approximately 1\/2 inch border.  <\/li>\n\n\n\n<li>Prepare a frosting bag with sniped corner to make a small hole.
