{"id":439,"date":"2023-11-05T21:08:52","date_gmt":"2023-11-05T21:08:52","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=439"},"modified":"2025-11-09T22:54:34","modified_gmt":"2025-11-09T22:54:34","slug":"squash-spinach-and-coconut-soup","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2023\/11\/05\/squash-spinach-and-coconut-soup\/","title":{"rendered":"Squash, Spinach and Coconut Soup"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tsp grated ginger<\/li>\n\n\n\n<li>1 C canned bamboo shoots, drained and rinsed<\/li>\n\n\n\n<li>4.5 C vegetable broth<\/li>\n\n\n\n<li>3\/4 C coconut milk<\/li>\n\n\n\n<li>1 small red Thai chili pepper<\/li>\n\n\n\n<li>1 tbsp soy sauce <\/li>\n\n\n\n<li>1 tbsp fish sauce<\/li>\n\n\n\n<li>2 tsp lemon juice<\/li>\n\n\n\n<li>1 tsp corn starch<\/li>\n\n\n\n<li>3 C peeled butternut squash<\/li>\n\n\n\n<li>9 C spinach<\/li>\n<\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut bamboo shoots in to thin strips, if desired<\/li>\n\n\n\n<li>Bring broth to a boil in a large saucepan.  Once boiling begins, stir in coconut milk, chili pepper, ginger, soy sauce, and fish sauce.<\/li>\n\n\n\n<li>Whisk together lemon juice and corn starch in a small bowl.
