{"id":409,"date":"2022-02-05T17:24:07","date_gmt":"2022-02-05T17:24:07","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=409"},"modified":"2023-01-16T01:39:20","modified_gmt":"2023-01-16T01:39:20","slug":"spinach-lasagna-soup","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2022\/02\/05\/spinach-lasagna-soup\/","title":{"rendered":"Spinach Lasagna Soup"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tbsp olive oil <\/li><li>8 oz Italian sausage, castings removed<\/li><li>1 medium onion<\/li><li>3 garlic cloves <\/li><li>2 tbsp tomato paste <\/li><li>1 tsp oregano <\/li><li>1 tsp basil<\/li><li>1\/2 tsp salt <\/li><li>1\/4 tsp pepper <\/li><li>4 cups low sodium chicken broth<\/li><li>15 oz canned crushed tomatoes <\/li><li>1 cup water<\/li><li>4 oz noodles<\/li><li>3 cups fresh spinach leaves, coursely chopped <\/li><li>Ricotta cheese, Parmesan cheese, fresh basil for serving <\/li><\/ul>\n\n\n\n<p>Directions;:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>In a large pot over medium high heat, heat the oil until shimmering.  Add sausage and onion, cook until sausage is browned and onions softened (~5 min).  Add garlic, cook 30 sec, then stir in tomato paste, oregano, basil, salt and pepper.<\/li><li>Add broth, crushed tomatoes and water, bring to boil.  Add noodles, reduce heat and simmer ~15 minutes until noodles are done.
