{"id":365,"date":"2021-02-13T16:30:38","date_gmt":"2021-02-13T16:30:38","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=365"},"modified":"2023-01-16T01:41:31","modified_gmt":"2023-01-16T01:41:31","slug":"beet-and-cream-cheese-hummus","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2021\/02\/13\/beet-and-cream-cheese-hummus\/","title":{"rendered":"Beet and Cream Cheese Hummus"},"content":{"rendered":"\n<p><strong>Ingredients<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>6 oz beet<\/li><li>15.5 oz can chickpeas, rinsed and drained<\/li><li>1\/3 C tahini <\/li><li>1\/4 C lemon juice <\/li><li>1\/4 C light cream cheese <\/li><li>1 garlic clove, minced <\/li><li>1\/2 tsp salt<\/li><li>1\/2 tsp pepper <\/li><li>1\/4 tsp coriander <\/li><\/ul>\n\n\n\n<p><strong>Directions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 475.  Wrap beet in foil and place on baking sheet.  Roast until knife slides easily to center, 60 &#8211; 70 minutes.<\/li><li>Process chickpeas, tahini, lemon juice, cream cheese, garlic, salt, pepper and coriander in fools processor until smooth.<\/li><li>Remove skin from beet.  Trim root and cut beet into 8 pieces.
