{"id":351,"date":"2020-12-31T01:24:01","date_gmt":"2020-12-31T01:24:01","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=351"},"modified":"2020-12-31T22:41:19","modified_gmt":"2020-12-31T22:41:19","slug":"greens-and-ricotta-gnundi","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2020\/12\/31\/greens-and-ricotta-gnundi\/","title":{"rendered":"Greens and Ricotta Gnundi"},"content":{"rendered":"\n<p>12 oz ricotta cheese<\/p>\n\n\n\n<p>1\/2 cup flour<\/p>\n\n\n\n<p>1 oz Parmesan cheese, grated<\/p>\n\n\n\n<p>1 tbsp pinko bread crumbs<\/p>\n\n\n\n<p>3\/4 tsp salt<\/p>\n\n\n\n<p>1\/2 tsp pepper <\/p>\n\n\n\n<p>1\/4 tsp lemon zest <\/p>\n\n\n\n<p>10 oz greens frozen (spinach, kale, etc) or  2\/3 cup cooked, squeeze excess water<\/p>\n\n\n\n<p>2 egg whites <\/p>\n\n\n\n<p><strong>Sauce:<\/strong><\/p>\n\n\n\n<p>4 tbsp butter <\/p>\n\n\n\n<p>3 garlic closes sliced<\/p>\n\n\n\n<p>12 oz grape or cherry tomatoes , halved<\/p>\n\n\n\n<p>2 tsp cider vinegar <\/p>\n\n\n\n<p>1\/4 tsp salt<\/p>\n\n\n\n<p>1\/4 tsp pepper <\/p>\n\n\n\n<p>2 tbsp fresh basil<\/p>\n\n\n\n<p><strong>Gnundi<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Line a baking sheet with paper and spread ricotta on it.  Let rest 10 minutes.    <\/li><li>Combine flour, Parmesan, panko, salt, pepper and lemon zest in a large bowl.  <\/li><li>Process greens in a food processor until finely chopped.<\/li><li>Fold paper towels over ricotta and press to remove remaining liquid.  <\/li><li>Add greens and ricotta to bowl with flour mixture and combine,<\/li><li>Take heaping tsps and shape into 1-in balls.  Should make 40-50.<\/li><\/ol>\n\n\n\n<p><strong>Sauce <\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Melt butter in small sauce pan.  Add garlic and swirl occasionally until garlic turns brown.<\/li><li>Add tomatoes and vinegar, then cover with lid.<\/li><\/ol>\n\n\n\n<p><strong>Finish<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Bring one quart water to bowl in Dutch oven.  Add 1.5 tsp salt.  Then add ricotta balls, and simmer for 5 min.<\/li><li>As ricotta balls cook, add salt and pepper to sauce and heat ove medium high until tomatoes soften, ~2 min.<\/li><li>Divide sauce between 4 bowls.  Add Gnudi on top of sauce.
