{"id":218,"date":"2009-03-14T23:26:00","date_gmt":"2009-03-14T23:26:00","guid":{"rendered":"https:\/\/cooleysekula.net\/cooking\/?p=218"},"modified":"2020-12-23T23:27:13","modified_gmt":"2020-12-23T23:27:13","slug":"risotto-barley-risotto-with-fennel-and-olives","status":"publish","type":"post","link":"https:\/\/cooleysekula.net\/cooking\/index.php\/2009\/03\/14\/risotto-barley-risotto-with-fennel-and-olives\/","title":{"rendered":"Risotto: Barley Risotto with Fennel and Olives"},"content":{"rendered":"\n<p><strong>Ingredients:<\/strong><br>1 tbsp butter<br>1.5 cups chopped leeks<br>1 cup finely chopped fennel bulb<br>1\/2 cup chopped red pepper<br>3\/4 cup uncooked pearl barley<br>1 tsp fresh tyme<br>2 garlic cloves, minced<br>3.5 cups chicken broth<br>1\/2 cup dry white wine<br>1\/3 cup grated Parmesan cheese<br>1\/4 cup chopped fresh parsley<br>1 tsp black pepper<br>1\/4 cup oil-cured olives, pitted and chopped<\/p>\n\n\n\n<p><strong>Directions:<\/strong><br>Melt butter in a large sauce pan over medium-high heat.<br>Add 3\/4 cup leek, 1\/2 cup fennel and red pepper; saute<br>5 minutes, or until tender. Add barley, thyme, and garlic;<br>cook 2 minutes, stirring constantly. Stir in 2 cups broth,<br>and cook 10 minutes or until liquid is nearly absorbed,<br>stirring constantly.
