Buffalo Chicken Meatballs

Ingredients – Creamy Wing Sausce

  • 2 tbsp butter
  • 1/3 cup Frank’s hot sauce or other buffalo wing sauce
  • 1/3 cup crumbled blue feta

Ingredients – Meatballs

  • 1 lb ground chicken
  • 2 eggs
  • 1/2 of the creamy wing sauce
  • 2/3 cup bread crumbs
  • 1 celery stalk, finely diced
  • 1 garlic clove, minced
  • 1/3 cup green onion, diced
  • Salt
  • Favorite dressing for serving

Directions:

  1. Heat oven to 425 F. Line a baking sheet with parchment paper.
  2. In a small sauce pan, combine all the ingredients for wing sauce. Heat over medium high heat, stirring continuously until butter and cheese are melted. Remove from heat.
  3. In a large bowl combine chicken, eggs, and 1/2 of the creamy wing sauce. Add the bread crumbs, celery, garlic, and onion. Mix well.
  4. Form meatballs and place on parchment lined baking sheet.
  5. Bake for 15-20 minutes until center reaches 165 F.
  6. Toss cooked meatballs with remaining wing sauce. Serve with favorite dressing.
