Orange Cranberry Slices

Ingredients:

  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla
  • 3 cups all purpose flour
  • 1.5 tsp baking powder
  • 2/3 cup chopped sweetened dried cranberries
  • 1/4 cup chopped pecans
  • 8 to 10 drops red food coloring
  • 2 tsp freshly grated orange peel

Directions:

  1. Combine butter and sugar in a large bowl. Beat a medium speed, scraping bowl often, until creamy. Add egg, milk, and vanilla, continue beating until well mixed. Reduce speed to low; add flour and baking powder. Beat until mixture forms dough
  2. Remove 1/3 of dough. Set aside. Add dried cranberries, pecans, and food coloring to dough in bowl. Bead until well mixed. Kneed orange peel into reserved 1/3 of dough.
  3. Line 8×4 inch loaf pan with plastic wrap, extending wrap over edges. Divide cranberry dough in half; evenly press half of cranberry dough into pan. Evenly press orange dough on top of cranberry dough. Cover with remaining cranberry dough, pressing evenly. Overlap plastic wrap to cover dough tightly. Refrigerate until firm (4 hours or overnight).
  4. Heat oven to 375 degrees. Remove dough from plastic wrap. Cut dough into 1/4 inch slices and cut each slice into thirds. Place 2 inches apart on baking sheets. Bake for 8 to 10 minutes or until edges are lightly browned.
