Inspired by the TV Show Father Brown.
Ingredients:
- 15 oz (3 cups) all purpose flour
- 2 and 1/3 oz (1/3 cup) sugar
- 2 tbsp baking powder
- 1/2 tsp salt
- 8 tbsp unsalted butter cut into 1/2 inch pieces
- 1 cup buttermilk
- 2 eggs
- 1 cup coarsely chopped strawberries
Steps:
Preheat oven to 500.
Combine flour, sugar, baking powder and salt in the bowl of a food processor. Pulse several times to combine. Add butter cubes and pulse until mixture looks like fine crumb.
In a small bowl whisk the buttermilk and eggs.
Transfer the flour mixture to a large bowl. Pour the buttermilk mixture over the flour mixture. Fold the mixture together with a spatula. Gently knead (~10 folds) the mixture.
Turn the mixture onto a well floured surface. Pat into a rectangle (~10 x 14 in). Spread strawberries evenly onto the top of the rectangular shaped dough.
Gently roll the rectangle up as if making a loaf. Then pat the loaf into a 4 x 1o in rectangle. Cut the rectangle into 8 triangles (cut in half, cut each half in half, then cut each square across the diagonal).
Transfer the scones to a parchment paper lined baking sheet. Reduce oven temperature to 425 and bake for 10 – 15 minutes or until top begins to brown, rotating pan 1/2 way through if needed.
Rest on a wire rack for 10 minutes before serving.
