Pumpkin Cookies

Ingredients:

  • 1 C unsalted butter, melted
  • 1 C brown sugar
  • 1/2 C sugar
  • 2 tsp vanilla extract
  • 2/3 C pumpkin (cooked or canned)
  • 1.5 C all purpose flour
  • 1.5 C whole wheat flour
  • 4 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 tsp salt
  • 1 C chocolate chips

Directions:

  1. Whisk together the melted butter, sugars valiant and pumpkin in a medium bowl.
  2. Which the flours, pumpkin pie spice, baking soda, baking powder, and salt.
  3. Combine the butter mixture and the flour mixture with a spatula. Cover and chill dough in refrigerator for 1 hour to 3 days.
  4. Preheat oven to 350 degrees.
  5. Drop cookies onto a lined baking sheet.
  6. Bake cookies for 11 to 13 minutes or until cookies are dry and edges are set.
  7. Cool cookies on baking sheet for 10 minutes then transfer to wire rack to cool completely.
