Ingredients:
- 1 tbsp olive oil
- 8 oz Italian sausage, castings removed
- 1 medium onion
- 3 garlic cloves
- 2 tbsp tomato paste
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cups low sodium chicken broth
- 15 oz canned crushed tomatoes
- 1 cup water
- 4 oz noodles
- 3 cups fresh spinach leaves, coursely chopped
- Ricotta cheese, Parmesan cheese, fresh basil for serving
Directions;:
- In a large pot over medium high heat, heat the oil until shimmering. Add sausage and onion, cook until sausage is browned and onions softened (~5 min). Add garlic, cook 30 sec, then stir in tomato paste, oregano, basil, salt and pepper.
- Add broth, crushed tomatoes and water, bring to boil. Add noodles, reduce heat and simmer ~15 minutes until noodles are done. Stir in spinach and remove from heat.
