Cookie Ingredients:
- 1/2 cup eggnog
- 2 tablespoons flaxseed, ground
- 3 cups (390g) flour
- 1.5 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup sugar
- 16 tsp unsalted butter
- 1 tsp vanilla
Glaze Ingredients:
- 1 cup powder sugar
- 1/4 cup eggnog
- 1/2 tsp nutmeg
Directions:
- Preheat oven to 350 degrees.
- Whisk the eggnog and ground flaxseed together in a small bowl and let sit for 10 min.
- Mix the flour through salt with a whisk in a large bowl.
- Beat on medium speed the butter and sugar until light and fluffy. Add the eggnog/flax mixture and vanilla. Mix on medium speed.
- Add 1/3 of the flour mixture to mixer and blend. Repeat two more times.
- Using a scoop or tablespoon measuring spoon, scoop the dough into portions and place on baking sheet. Bake for 12 minutes.
- Let cookies cool i]on baking sheet for 5 minutes, then transfer to wire cooling rack.
- To prepare glaze, combine ingredients in a small bowl.
- Dunk cooled cookies into glaze.
