Eggnog Cookies

Cookie Ingredients:

  • 1/2 cup eggnog
  • 2 tablespoons flaxseed, ground
  • 3 cups (390g) flour
  • 1.5 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup sugar
  • 16 tsp unsalted butter
  • 1 tsp vanilla

Glaze Ingredients:

  • 1 cup powder sugar
  • 1/4 cup eggnog
  • 1/2 tsp nutmeg

Directions:

  • Preheat oven to 350 degrees.
  • Whisk the eggnog and ground flaxseed together in a small bowl and let sit for 10 min.
  • Mix the flour through salt with a whisk in a large bowl.
  • Beat on medium speed the butter and sugar until light and fluffy. Add the eggnog/flax mixture and vanilla. Mix on medium speed.
  • Add 1/3 of the flour mixture to mixer and blend. Repeat two more times.
  • Using a scoop or tablespoon measuring spoon, scoop the dough into portions and place on baking sheet. Bake for 12 minutes.
  • Let cookies cool i]on baking sheet for 5 minutes, then transfer to wire cooling rack.
  • To prepare glaze, combine ingredients in a small bowl.
  • Dunk cooled cookies into glaze.
