Oatmeal Cream Pies

Cookie Ingredients:

  • 2 cups whole wheat flour
  • 2 cups oatmeal
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 C unsalted butter
  • 3/4 C sugar
  • 3/4 C brown sugar
  • 2 tbsp molasses
  • 2 eggs

Marshmallow Buttercream Ingredients:

  • 8 tbsp unsalted butter
  • 2 C powder sugar
  • 1/4 tsp vanilla
  • 3.5 oz marshmallow fluff

Directions:

  1. Heat oven to 350 F and line baking sheets with parchment paper.
  2. Mix the flour, oats, baking soda, baking powder, cinnamon and salt in a bowl and set aside.
  3. Cream butter, sugar, brown sugar and molasses until creamy and all ingredients combined. Add the eggs, mix until combined.
  4. Slowly add the dry ingredients to the butter mixture until fully incorporated.
  5. Drop 1-2 tsp of cookie dough onto baking sheet, about 2 inches apart. Bake 9 to 10 minutes. Cool on baking sheets.
  6. To make buttercream combine butter, powder sugar and vanilla with a mixer until light and fluffy. Add marshmallow fluff and mix until fully incorporated.
  7. Make sandwiches by spreading buttercream between two cookies.
