Cookie Ingredients:
- 2 cups whole wheat flour
- 2 cups oatmeal
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 C unsalted butter
- 3/4 C sugar
- 3/4 C brown sugar
- 2 tbsp molasses
- 2 eggs
Marshmallow Buttercream Ingredients:
- 8 tbsp unsalted butter
- 2 C powder sugar
- 1/4 tsp vanilla
- 3.5 oz marshmallow fluff
Directions:
- Heat oven to 350 F and line baking sheets with parchment paper.
- Mix the flour, oats, baking soda, baking powder, cinnamon and salt in a bowl and set aside.
- Cream butter, sugar, brown sugar and molasses until creamy and all ingredients combined. Add the eggs, mix until combined.
- Slowly add the dry ingredients to the butter mixture until fully incorporated.
- Drop 1-2 tsp of cookie dough onto baking sheet, about 2 inches apart. Bake 9 to 10 minutes. Cool on baking sheets.
- To make buttercream combine butter, powder sugar and vanilla with a mixer until light and fluffy. Add marshmallow fluff and mix until fully incorporated.
- Make sandwiches by spreading buttercream between two cookies.
