Moroccan Fish in Spicy Tomato Sauce

Ingredients:

  • 1 lb fish
  • 1/2 C chopped onion
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 15 oz can crushed tomatoes
  • 1 C water
  • 2 tbsp smoked paprika
  • 1 tbsp paprika
  • 1 tsp powdered ginger
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper
  • 1 tsp pepper
  • 1/4 C chopped cilantro

Directions:

  1. Heat 1 tbsp olive oil in skillet over medium high heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and sauté about 1 minute.
  2. Add tomato paste, smoked paprika, paprika, ginger, cumin, salt and pepper and sauté about 1 minute.
  3. Add crushed tomatoes and water, mix well. Bring mixture to a boil, reduce heat to simmer, cover and cook 10 minutes.
  4. Gently place fish in sauce, cover fish with sauce. Cover mixture with lid and simmer for 10 minutes.
  5. Sprinkle with chopped cilantro and serve with rice or couscous.
