Ingredients:
- 1 lb fish
- 1/2 C chopped onion
- 1 tsp minced garlic
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 15 oz can crushed tomatoes
- 1 C water
- 2 tbsp smoked paprika
- 1 tbsp paprika
- 1 tsp powdered ginger
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp crushed red pepper
- 1 tsp pepper
- 1/4 C chopped cilantro
Directions:
- Heat 1 tbsp olive oil in skillet over medium high heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and sauté about 1 minute.
- Add tomato paste, smoked paprika, paprika, ginger, cumin, salt and pepper and sauté about 1 minute.
- Add crushed tomatoes and water, mix well. Bring mixture to a boil, reduce heat to simmer, cover and cook 10 minutes.
- Gently place fish in sauce, cover fish with sauce. Cover mixture with lid and simmer for 10 minutes.
- Sprinkle with chopped cilantro and serve with rice or couscous.
