Ingredients:
1/4 cup orange juice
1/4 cup soy sauce
1/4 cup sherry
1/4 cup Dijon mustard
2 Tbsp fresh grated ginger (1.5 tsp ground ginger)
2 Tbsp honey
4 (6-oz) salmon fillets (1 inch thick)
cooking spray
Directions:
1. Combine first 6 ingredients in a large zip top
bag. Add fish to bag and marinate in refrigerator
for 30 minutes.
2. Prepare grill or broiler
3. Place fish on grill rack or broiler pan coated
with cooking spray. Cook 5 minutes on each side or
until the fish flakes easily when tested with fork,
basting frequently with reserved marinade.
4. Place remaining marinade in a sauce pan. Bring
to a boil. Serve with fish.
