Italian Meat Loaf (Better than Steve’s Mom’s)

Ingredients:
1 egg, beaten
8 oz. tomato sauce, divided
1/2 cup dry bread crumbs
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. oregano, divided
1 tsp. salt
1/8 tsp. black pepper
1.5 lbs. ground beef
1/2 cup shredded mozzarella cheese
2 tbsp. grated Parmesan cheese

Directions:
1. In a bowl, combine the egg, half of the tomato sauce,
bread crumbs, onion, and green pepper. Add beef; mix well.

2. On a large piece of heavy-duty foil or wax paper, pat
the meat mixture inot a 15-in. x 8-in. rectangle. Sprinkle
cheeses to within 1/2-in. of edges. Roll up, jelly roll style,
starting with a short side and peeling foil away while rolling.
Seal seam and ends.

3. Transfer to a pan. Cook at 375 for 45 to 60 minutes (or done).
