Escarole and Sausage Soup

Ingredients:
1/2 to 1 lb of mild turkey sausage
1 medium onion, diced
2 cups chicken broth (reduced sodium)
14.5 oz can beans, drained
2 tsp chopped garlic cloves
14.5 oz can diced tomatoes
5 cups escarole, chopped
Parmesan cheese

Directions:
Remove sausage casings, brown sausage. Remove sausage
from pan. Add onion and saute 5 minutes. Add garlic
and saute additional minute. Then add broth, beans,
tomatoes and sausage. Bring to a boil. Add escarole
and cook thoroughly.

Pour into bowls and top with Parmesan cheese
