Ingredients:
2 extra-ripe medium bananas, cut into chunks
2 C. granola
1 1/2 C. all-purpose flour
1 C. packed brown sugar
1 tsp. baking powder
1 tsp. gound cinnamon
2 eggs
1/2 C. margarine, melted
1/4 C. vegetable oil
1 C. chocolate chips
Directions:
1. Preheat oven to 350 F. Lightly grease cookie sheets. In food processor or blender, process bananas until pureed (1 cup).
2. Combine granola, flour, sugar, baking powder and cinnamon in large bowl. Beat in pureed bananas, eggs, margarine and oil. Stir in chocolate chips.
3. Drop by 1/4 cupfuls onto prepared cookie sheets. Spread dough into 2 1/2 to 3 inch circles. Bake about 16 minutes or until golden. Remove to wire racks to cool.
