Rye Chocolate Chip Cookies

Ingredients:

  • 1 cup (130 g) whole wheat flour
  • 1 cup (140 g) rye flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup walnut (or canola) oil
  • 1 1/4 cup (268 g) sugar
  • 2 large eggs
  • 1 tbsp molasses
  • 1 tbsp vanilla extract
  • 3/4 cup chocolate chips
  • 1/2 cup nuts (walnuts or pecans

Instructions:

  • Preheat oven to 350 degrees.
  • In a medium bowl whisk flours, salt, and baking soda.
  • In a large bowl, whisk the sugar, eggs, molasses, and vanilla.
  • Add the flour mixture to the egg mixture and stir until combined. Add chocolate chips and nuts. Combine.
  • Use a scoop or spoon to drop mounds of dough onto sheet. Bake for 8 to 12 minutes, Cool on sheet for 5 minutes and then transfer to wire rack to cool.
