Ingredients:
- 1 C unsalted butter, melted
- 1 C brown sugar
- 1/2 C sugar
- 2 tsp vanilla extract
- 2/3 C pumpkin (cooked or canned)
- 1.5 C all purpose flour
- 1.5 C whole wheat flour
- 4 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1.5 tsp salt
- 1 C chocolate chips
Directions:
- Whisk together the melted butter, sugars valiant and pumpkin in a medium bowl.
- Which the flours, pumpkin pie spice, baking soda, baking powder, and salt.
- Combine the butter mixture and the flour mixture with a spatula. Cover and chill dough in refrigerator for 1 hour to 3 days.
- Preheat oven to 350 degrees.
- Drop cookies onto a lined baking sheet.
- Bake cookies for 11 to 13 minutes or until cookies are dry and edges are set.
- Cool cookies on baking sheet for 10 minutes then transfer to wire rack to cool completely.
