Spinach Lasagne Soup

Ingredients:

  • 1 tbsp olive oil
  • 8 oz Italian sausage
  • 1 medium onion
  • 3 garlic cloves minced
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 ground black pepper
  • 4 cups low sodium chicken broth
  • 15 oz can no salt added crushed tomatoes
  • 1 cup water
  • 4 oz noodles
  • 3 cups (2 oz) spinach, coarsely chopped
  • 1/3 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil

Directions

  • In a large pot over medium high heat, heat the oil until shimmering. Add sausage and onion, stirring frequently, breaking up the sausage, until the sausage is browned and onion softened. Add garlic, cook 30 sec, then stir in the tomato paste, oregano, basil, salt and pepper.
  • Add broth, crushed tomatoes and water. Bring to boil. Add noodles and reduce heat to medium low, cook uncovered for about 15 minutes until noodles are Al dente. Stir in spinach, take off heat.
  • Serve with a dollop of ricotta and sprinkle with Parmesan and basil to serve.
