Spinach Lasagna Soup

Ingredients:

  • 1 tbsp olive oil
  • 8 oz Italian sausage, castings removed
  • 1 medium onion
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 cups low sodium chicken broth
  • 15 oz canned crushed tomatoes
  • 1 cup water
  • 4 oz noodles
  • 3 cups fresh spinach leaves, coursely chopped
  • Ricotta cheese, Parmesan cheese, fresh basil for serving

Directions;:

  • In a large pot over medium high heat, heat the oil until shimmering. Add sausage and onion, cook until sausage is browned and onions softened (~5 min). Add garlic, cook 30 sec, then stir in tomato paste, oregano, basil, salt and pepper.
  • Add broth, crushed tomatoes and water, bring to boil. Add noodles, reduce heat and simmer ~15 minutes until noodles are done. Stir in spinach and remove from heat.
