Air Fryer Pretzel Chicken Schnitzel

Ingredients:

  • 1 lb boneless chicken breast (2 breasts)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup whole wheat flour
  • 1 large egg
  • 3 tbsp low-fat buttermilk
  • 1.5 cups pretzels

Directions:

  1. Pound chicken breasts to 1/2 in thickness. Cut each breast in half. Season with salt.
  2. Chop pretzels in a food processor or place in zipper bag and crush with rolling pin. Pour flour and pepper onto dinner plate and and mix. Whisk egg and buttermilk together in a shallow dish.
  3. Dip each breast in flour , then dip in buttermilk-egg mixture and finally coat with pretzels.
  4. Place chicken in air fryer and cook at 400 degrees for 12 minutes or until a thermometer reads 165 degrees.
