Ingredients:
- 1 lb boneless chicken breast (2 breasts)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup whole wheat flour
- 1 large egg
- 3 tbsp low-fat buttermilk
- 1.5 cups pretzels
Directions:
- Pound chicken breasts to 1/2 in thickness. Cut each breast in half. Season with salt.
- Chop pretzels in a food processor or place in zipper bag and crush with rolling pin. Pour flour and pepper onto dinner plate and and mix. Whisk egg and buttermilk together in a shallow dish.
- Dip each breast in flour , then dip in buttermilk-egg mixture and finally coat with pretzels.
- Place chicken in air fryer and cook at 400 degrees for 12 minutes or until a thermometer reads 165 degrees.
