Chocolate Chip Irish Cream Pound Cake

Ingredients:

  • 1/4 C mini chocolate chips
  • 1 tsp cake flour
  • 2 3/4 C cake flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 C reduced fat cream cheese
  • 10 tbsp butter, softened
  • 1 C sugar
  • 1 C packed brown sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 3/4 C Irish Cream
  • Cooking spray
  • 2 tsp powder sugar

Directions:

  1. Preheat oven to 375. Combine chocolate chips and 1 tsp flour, set aside.
  2. Whisk together cake flour, baking powder and salt in a large bowl.
  3. Combine cream cheese and butter in a mixer and beat at high speed until blended. Add sugars and vanilla, beat until combined. Add eggs one at a time and beat well after each addition. With mixer running alternate adding flour mixture and liquor alternatively, beginning and ending with flour mixture. Stir in chocolate chips.
  4. Spray Bundt pan with cooking spray. Pour batter into pan. Bake 55 minutes or until toothpick comes out clean. Cool 10 minutes in pan. Turn out on on serving plate and sift with powder sugar.
