Butternut Squash Pizza

Ingredients:

1 small butternut squashed, peeled, halved, and sliced 1/4 inch thick
1 medium onion, halved and thinly sliced
2 Tbsp extra virgin olive oil
1 Tbsp finely chopped fresh rosemary
1 Pizza crust (make yourself or purchase pre-made)
1/4 cup shaved Parmesan cheese

Directions:

1. Preheat oven to 400 F.

2. Toss together squash, onion, olive oil and rosemary in bowl. Spread onto large baking dish and roast for 30 minutes or until tender.

3. Increase oven temperature to 450 F. Spread pizza dough onto large baking sheet and top with squash mixture. Sprinkle with parmesan cheese and drizzle with oil. Bake for 13 to 17 minutes.
